The white opens from its very first year, straight and luminous. Then, slowly, it unfolds: between seven and ten years, depending on the vintage, it reveals a mineral depth and delicate salinity — the discreet signature of Trévallon’s limestone and light.
At Trévallon, our white wine is rare and precious: barely two hectares spread across fifteen small parcels.
Six grape varieties coexist there, between 50 and 100 meters above sea level , nestled in the folds of the northern slope of the Alpilles. Each vine, depending on its exposure, the surrounding trees, or the size of its parcel, has its own microclimate.
This patiently cultivated diversity nourishes the wine’s complexity and strengthens its resilience in the face of changing climate.
Harvesting takes place from mid-August to late September, following the rhythm of each grape variety’s ripeness and natural light.
Hand harvesting, direct pressing, careful settling. Each parcel is aged separately for twelve months in barrels and demi-muids.
Malolactic fermentations occur naturally, and light sulphur additions punctuate the ageing process. Blending takes place in August, followed by a clay fining before bottling, without filtration.
